Earth Day Tree Hugger Lunch

I’m back! My hand is in great shape and Cora is headed back to school, just in time to bring an Earth Day themed lunch for the Earth Day Blog Hop. I just love these, so many creative ideas in one place! So be sure to click on the button at the end of the post to see some great green, earthy, fun lunches! In honor of Earth Day, I decided to go entirely vegan with this lunch. I am curious to see how Cora reacts to vegan (almond) cheese!
We are all tree huggers in our family so I thought a tree hugging cutie would be a fun way to celebrate the day. The sandwich is cheddar style almond cheese quesadilla on whole wheat lavash and the girl is mozzarella style almond cheese with fruit leather and soy paper accents. Here is our cutie without her tree:
Our vegan Earth Day lunch is finished off with a hummus and spinach globe, whole wheat pretzel sticks, carrot sticks, pineapple flowers, raspberries and two little vegan marshmallow ‘clouds’

Very cute, you have my vote in the Earh Day Bento contest! 🙂 So how did your girl receive the ‘cheeze’? I haven’t found a vegan cheese yet that I like, but Daiya is supposed to be awesome!

Thanks! Cora seemed to like the almond cheese, but didn’t eat as much of it as when she has dairy cheese. I found it OK, a little plasticy

LOVE the tree hugger idea. I had the very same idea, but it would never have been this cute! Nice handywork on the girl and adore the spinach leaves. AND vegan too. I’m impressed!
